This instrument measures acetylene pressure using a copper alloy Bourdon tube. That is a C-shaped tube that will deform, bending straighter when pressure inside the tube increases. This will cause one end of the tube to move, and that movement is enhanced by a mechanism connected to an indicator needle that rotates over a display scale, enabling you to read the pressure.
